Meal Planning

Meal planning, this is one of my Sunday activities: scouring cookbooks, foodie blogs and recipe sites to see anything that might jump out at me to create that next week.

This coming week I will be cooking dinner Monday - Wednesday nights and tonight is a repeat recipe, Mr. Max requested grilled pineapple and chicken quesadillas.

However, I will feature new recipes for these other nights that consist of:
  • Skinny Chicken Lettuce Wraps
  • Pork Tenderloin with Lemon Green Beans and Moroccan Sweet Potato Crisps
  • Halibut Fillets with Stuffed Zucchini (stuffed with a couscous and feta)

Chicken Lettuce Wraps (From America's Test Kitchen, Light and Healthy, 420 calories)
1 lb ground chicken
Water chestnuts
Butter-Lettuce leaves
Hoisin Sauce
Asian Chili Pepper sauce
Brown Rice
Scallion
Lime Juice
Brown Sugar
Canola Oil
Ground Ginger

Pork Tenderloin/Green Beans/Sweet Potato (sides from America's Test Kitchen, Light and Healthy, Green Beans - 100 calories, Moroccan Sweet Potatoes - 220 calories)
1 pork tenderloin (garlic and herb flavor)
2 long and skinny sweet potatoes (best for cooking)
Vegetable oil spray
Canola oil
Ginger
Coriander
Cumin
Cinnamon
Turmeric

Halibut and Stuffed Zucchini (Stuffed Zucchini from America's Test Kitchen, Light and Healthy, calories 240)
2 Halibut fillets
2 Zucchinis
1 cup couscous (my mom gave me a sundried tomato and spinach couscous to try)
Crumbled feta cheese
Lemon
Cherry tomatoes
Oregano
Basil
