Grocery List:
- 1 1/2 cup low-sodium chicken broth
- 1/4 cup lemon juice
- 1 tbsp. olive oil
- 1 1/2 cups plain, dry, quick-cooking couscous
- 2 tbsp. chopped fresh flat leaf parsley
- 2 tsp. minced lemon zest
Remove from heat; stir in couscous, parsley, zest and salt.
Cover and let stand for 5 minutes. Fluff with a spoon or fork, then ready to serve!
